Rainbow Fairy Cakes

Red and yellow and pink and blue…Ben’s recipe for fairy cakes are cute, colourful and cake-alicious! 

Ingredients:

Fairy cakes (12):

  • 150g butter
  • 150g sugar
  • 1tsp vanilla extract
  • 3 eggs
  • 150g self-raising flour

Frosting:

  • 150g icing sugar
  • 250g butter
  • 1tsp vanilla
  • Different food colouring gels
  • Sprinkles

Equipment:

  • Freezer bags
  • Piping bag
  • Fairy cake cases
  • Cupcake tin

Method:

Cupcakes:

  • Beat butter, sugar and vanilla extract
  • Beat in 1 egg, 1/3 of flour and splash of milk
  • Repeat until all eggs and flour used up
  • Spoon 2-3 tbsp of dough into different freezer bags
  • Add several drops of colouring to each bag and massage colour into dough
  • Pour a layer of each coloured dough into the pastry cases
  • Bake in the oven for 25-35 mins at 160°C/325°C

Frosting:

  • Beat all the ingredients
  • Add different food colouring and drag a knife through
  • Spoon frosting into piping bag

Decorating: 

  • Pipe frosting on to cupcakes and cover in sprinkles
